Recipe | Pot Roast With Gravy

Would you look at that? Four days in a row. I'm impressing myself, you guys. I wanted to share my go-to recipe on days I don't feel like cooking but want something delicious. This is literally so easy and effortless. The best part is it takes only 3 ingredients!

  • 3 lb roast. I used a rump roast this time, but I've used chuck roast in the past. Both were delicious and cooked the same way through.
  • 1 packet of Lipton onion dry soup and dip mix.
  • 2 cans of cream of mushroom soup.

In the morning pull your roast out of the freezer, no need to thaw the night before. Lightly salt and pepper your roast, and add any extra spices you like. In your crockpot, put the two cans of soup in and add the packet, stirring the two things together. Then add in your roast. I like to spoon some of the mixture on the roast itself, probably doesn't make too much of a difference. Put the lid on and set it to low. In nine hours you have a delicious roast and gravy. Add some mashed potatoes and a vegetable, and you've got a perfect, almost effortless meal for any day of the week!

I didn't get a picture before T cut it up to serve! It tastes so much better than it looks. And I did make some mashed potatoes and green beans, I forgot to get a picture of my actual plate, of course. Enjoy!

First Trimester Must Haves

Can you believe your eyes? Three posts in three days. I'm just as surprised as you are. I promised some pregnancy related posts, and here is the first one! First trimester must haves. The first trimester is the worst, ask any mom. Of course, this is my first pregnancy, but I'll take their word for it. I found out I was pregnant when I was about 5 weeks. I knew I was pregnant before taking the test when I had to run to the bathroom to throw up. I never throw up, so I knew. I had "morning sickness" for about 4 weeks, and I am one of the lucky ones. Morning sickness lasts all day, just so you know, it's a cruel joke to call it that. I was nauseous all day long, throwing up randomly, and always hungry but never wanting to eat. The consistent nausea stopped around 9 weeks for me. At times even recently, I'll just need to throw up. I get it over with, and I'm good to go again. I'm currently 14 weeks, and so that means I'm into my second semester. Here are some of the things that kept me alive the last 14 weeks, and some still continue to do so!

1. What To Expect When You're Expecting; This book has seriously just about everything you need to know about and answers most questions you have. It's something that my mother-in-law suggested and read every pregnancy, and I can see why!

2. Lip Balm; I don't know if it's just been me, but my lips are ridiculously chapped, like out of this world chapped. I can't seem to get them hydrated for the life of me. In order for me to get by, I'm constantly applying lip balm.

3. Prenatal Vitamins; Take them at night! Or else you might get sick to your stomach.

4. Body Pillow; Any kind of body pillow works, seriously. The ones that wrap all around you or just one like this. It makes me so comfy and I snuggle that thing all night long.

5. Ritz Crackers; Most people suggest saltines. I started off with saltines, and if you eat saltines in your soup just trust my word on this and find another cracker. I was up in the middle of the night, starving and nauseous, shoving saltines in my mouth and crying. It's not a pretty picture, and the thought of them makes me queazy. They make your mouth dry, and they aren't the best tasting alone. Trust me, get Ritz or Club or something!

6. Water; Drink lots of water all the time or else you'll find yourself extremely dehydrated out of nowhere and hate yourself. At the beginning I couldn't drink water without it making me want to vomit. If you're in the same position add fresh fruit to your water. The possibilities are endless, and the taste will dramatically change your feelings about staying hydrated.

7. Comfortable Clothes; Shirts, pants, bra. Find stuff that is comfortable. After awhile you'll feel your clothes getting tighter. And let's face it, your boobs are getting bigger and so are your hips. So find comfortable clothes and wear them.

8. Gum; My mouth gets extremely dry, especially when I drink water. I'm not sure why, but this is how I fix it.

So there you go! These are things that have been helping me. If you're a mommy or feeding for two, what were your first trimester must haves?

I Can't Leave A Dog In Need

This is Diah. I didn't know her name until about 10 o'clock last night. She was running outside my work yesterday, and we live by a really busy road. We brought her inside and put her in one of the crates they had in the grooming area. Animal Control was called and they said they couldn't pick her up until the morning. She would have been in that crate for 14 hours without food, water, or potty breaks and would be alone, scared, and confused. So naturally, I took her home. My heart would break if I didn't do something to help her. I know if my dogs were in her position I would want someone to do the same. The first picture was when I went to get her from the crate. Her face was so sad and scared. The second one is from in my car taking her to my house, much happier. She was such a sweetheart. I put her on Craigslist in hopes her family would find her on there and call me, and they did! I was so happy that I was able to take her home and make her feel loved until her family could get her again.

And Then There Were Three...

That, that right there is why I haven't had any desire to blog lately. It's been a crazy couple of months. We found out I was expecting about 9 weeks ago, and it was a shock! We weren't planning a baby, especially so soon after getting married, but everything happens for a reason. I had mixed emotions in the beginning, I think I"ll dedicate an entire post about that at a later time.

We had our first ultrasound on Thursday, and this little peach was bouncing all over the place. It was hard to get these pictures! I promise baby Hampton isn't wearing a clown nose, no, baby just likes it's hand by it's face. (Anybody else hate referring to them as "it" before you know the sex? Ugh.) I am currently 13 weeks 6 days. Tom is praying for a boy, but in all honesty, I am okay with either, as long as it's healthy. It was so crazy to see it moving around already. It's only 3 inches long, and it's already active! It was an experience like no other, I couldn't stop smiling the whole time. I was so fortunate my mom and husband were both there with me to experience it. This is my mom's first grandbaby, and she's over the moon.

I thought it was time to make the announcement since my family and friends know (including Amber, cyber hugs girl. I wish you lived closer too, so we could have girl days). Be expecting some pregnancy related posts soon!

Its 84 Degrees...

IN MY HOUSE.

I took a couple selfies for you to show just how hot I am.

I literally don't know what to do. It's 95 degrees outside, and only ten degrees cooler in here. I'm not a happy camper. In fact, I really don't even like summer. Unless I"m in the mountains where it's significantly cooler and  I also have access to a lake. I hate the heat.

My air conditioner is broken. Which is slowly driving me crazy. Last summer at my now husband's old house, the air conditioner broke there too. I got there one day and I kid you not it was 102 degrees inside. WTF.

To add to the jack-assery that is today, it was just miserably long at work. I felt like the clock kept rolling back. Then I arrive home to a sauna for a house AND the garden I just replanted was destroyed by who other than my husband's horrible mutt. Who is also to blame for murdering my strawberry plant not too long ago. Let's hope for a better day tomorrow. (That is, if I make it through the night without melting).
