Baked Lemon Chicken Recipe

When I think about summer eats, I think refreshing and light. Lemons are both of those things! My mom gave me a bag of lemons the other week, and I thought to myself, "how am I supposed to use all of these?" So, I came up with a baked chicken recipe that I could use a good portion of them with. Surprisingly, the recipe came out very good! I lack cooking skills, so it was nice to taste my creation and actually enjoy it. I thought I would share it with you today.


You will need:
  • 4 skinless boneless chicken breasts
  • 4 cloves of garlic
  • 1 cup coconut oil
  • 3 large lemons or 5 small lemons (enough for 3-4 tbsp of lemon juice)
  • 1 tsp lemon zest 
  • 1 cup chicken broth
  • 1 tsp poultry seasoning
  • 1 tsp oregano

First, set your oven to 400 degrees. Second thing you want to do is mince your garlic and then add your garlic and cup of coconut oil to a pan on low to medium. You will want your garlic soft and sizzling but not burning. While that is cooking zest your lemon enough for 1 tsp and set aside. Cut in half two of your lemons and squeeze enough juice to get 3-4 tbsp worth of it. Pick out seeds if any, or be smarter than I and squeeze your lemons over a strainer. Set juice aside. Get out a baking dish large enough to fit the four chicken breasts. Once your garlic is done, add to the baking dish. Also mix in lemon juice, zest, broth, seasoning, and oregano. I used my grandfather's poultry seasoning, you can use whatever kind you like. (His is absolutely delicious though and he has a variety of other meat seasonings as well if you want to check out his website here and order some. You will NOT be disappointed.) After mixing all these together, rinse off your chicken breast and put in the baking dish. Sprinkle extra seasoning or salt and pepper on top as you see fit. Slice up your remaining lemon(s) and place on top of chicken. I put the lemons that I had cut in half as well in open spaces to add some extra flavor! 




You will want to bake this in your over for 15 minutes. Once the 15 minutes are up, take it out and take off the lemon slices, flip chicken over, place the lemon slices back on and put it in for another 20 minutes or until juices are running clear!


And, there you have it! An easy and refreshing meal. We paired the chicken with a steamed vegetable medley and some potatoes. Thinking back on how I could possibly improve this recipe, I imagine the chicken would be much juicier if you were to marinate in a bag with poultry seasoning and the cup of chicken broth over night in the fridge.
